Trying to duplicat my favorite pizza shop dough.

My favorite pizza shop crust is thin and crispy. It doesn't sag when you pick up a slice. The one feature it has that my pizza's don't is that the bottom of the crust is white. No noticeable browning on it. Not sure why this is. They bake it in a deck style oven. Any ideas on the non-browning? Thanks.
