Hello,
I was checking out some of Forno Bravos videos here:
http://www.youtube.com/user/fornobravo
There is a video called "Hand Kneading bread dough". I was wondering if anybody knew what that device he poked into the dough was. A temp probe or moisture meter? He tried to show us the number but it was unreadable. I have always wanted to make sure that the moisture content is dead on but have never found such a device available. If that device is a temp probe I am not sure what exactly that would tell me either..maybe somebody could shed some light on that?

Hey Tiramiso... yep. it's a thermometer...
It was told to me a while back that bread dough should not rise above 85 degrees when needing...
hope this helps.
