I don't post here much (obviously) but I've gleaned a fair amount of info since joining. I don't get to make pizza as often as I would like otherwise I'd post more. That said, I didn't know of a group that would appreciate my gloating more than this crew

Snagged this last week off of eBay, Buy-It-Now was $800 (which was a deal) w/ a Best Offer option. I threw a low ball $600 and they accepted (free shipping to boot)!

It was advertised as Used once, LNIB. It arrived today with absolutely no sign of use, plastic still on it.

I had to tell someone.

It's an Anvil 10 qt. Normally about $1200 plus shipping. See it here.

It should do the job alright. With 9 people in the house, and a hatred for bought bread, we go through a lot of dough per week.

Will do. I'll also try and get some video.

My father is the primary user (he's our bread baker). He's done one batch since it's arrival yesterday. He is blown away. He's comparing it our 6qt KA Professional and there is simply no comparison. This is a whole different beast. He commented that the dough hook kneaded the dough as if by hand. He's also loving the built in timer.

Also the instruction manual says the limit is 800 grams of flour at 60% hydration. That's less than 3 pounds. Misprint?

12.5 pounds? Maybe you have a revised edition, but here's the link to the owner's manual at the manufacturer's website : http://www.anvilworld.com/us/DB_images/pdf_142_5.pdf

Page 10, Mixing Capacity, reflects 800 g flour & 500 g water. The mixer also has a "Caution" sticker on it next to the control panel reflecting the same maximum capacities.

Again, absent some new material I have not seen, how are we dismissing the manufacturer's own literature and say it will do 5, 10, or 12.5 pounds of dough?

I personally think that this mixer can do more than 1300 grams of dough, but Anvil needs to document the correction - a technical service bulletin, manual supplement, an advisory post on their website. Something other than somebody said it was okay. We all know how a warranty claim will end if the manufacturer learns that their specified capacities were ignored. Or even worse, the mixer suffers a premature death shortly after the warranty period expires.

Well, I called them this morning because the 20 qt manual had blank spots for capacity for the 10 & 20 qt. versions, and 5 & 10 is what they told me for the 10 (10 & 20 for the 20 qt. at 50% & 60 %AR).

Thanks for the reference material. Your link is apparently to the 20 quart mixer manual?

In your publication link the mixer capacities for the 10 quart are substantially different. But they still do not list mixer capacities for dough (hence your call to C/S). Also, it's unreasonable for Anvil to think that owners of their 10 quart model will reference a capacity chart in the manual for the 20 quart model.

So which chart is correct? Anvil needs to publish all of the correct capacities for the 10 & 20 quart mixers so that owners can get the proper results and service life from these machines.

ANVIL DOESN'T KNOW WHAT THEY ARE TALKING ABOUT! I HAVE TESTED THE 10 QT I HAVE AND IT WILL NOT MIX 10 LBS OF 60% HYDRATION DOUGH! UNLESS THIS IS A NEW PRODUCTION MODEL AND I DOUBT IT, THE STICKER ON THE MIXER GIVES A 1300 GM CAPACITY.

Yes. I didn't bother with the 10 qt., too small for my intended application. I just assumed it was the same cross-family chart as would be found in all the manuals

I HAVE GOTTEN THE THING TO WORK AT 1500 GMS DOUGH AT 60% HYDRATION. BECAUSE THE MIXER KNEADS MORE EFFICIENTLY WITH MORE DOUGH IN THE BOWL, THE WATER TEMP CAN BE WARMER.

I have a Mixer Capacity Chart that came with the mixer. Some of it sounds way off to me:

Bread & Roll dough 60% AR 12.5 lbs
Heavy Bread Dough 55% AR 7.5 lbs.
Pizza Dough 40% AR 5 lbs.
Pizza Dough 50% AR 5 lbs.
Pizza Dough 60% AR 4.5 lbs.

I WOULD SURE LIKE TO SEE THAT MANUAL! ISN'T THERE A STICKER ON THE MIXER GIVING A 800 GM FLOUR CAPACITY? I WOULD CONTACT ANVIL WORLD AND SEE WHAT THE DEAL IS. YOU COULD HAVE A ISSUE WITH FALSE INFO. I WOULD LIKE TO KNOW THEIR RESPONSE.
