The instructions say 12.5 pounds. What more could you want?
12.5 pounds? Maybe you have a revised edition, but here's the link to the owner's manual at the manufacturer's website :
http://www.anvilworld.com/us/DB_images/pdf_142_5.pdfPage 10, Mixing Capacity, reflects 800 g flour & 500 g water. The mixer also has a "Caution" sticker on it next to the control panel reflecting the same maximum capacities.
Again, absent some new material I have not seen, how are we dismissing the manufacturer's own literature and say it will do 5, 10, or 12.5 pounds of dough?
I personally think that this mixer can do more than 1300 grams of dough, but Anvil needs to document the correction - a technical service bulletin, manual supplement, an advisory post on their website. Something other than somebody said it was okay. We all know how a warranty claim will end if the manufacturer learns that their specified capacities were ignored. Or even worse, the mixer suffers a premature death shortly after the warranty period expires.
