Papa Del's Pizza Recipe

What type of flour should be used for Papa Del's Pizza ?

Any other expertise would also be appreciated as I will attempt to make one soon.

Steve, thanks for the reply.  Great forum......I have finally reached my long term goal of making NY Sytle Street Pizza and in large part due to your forum.  I look forward to a Papa Del's....the picture is awesome!

That picture was taken at the restaurant. And the recipe produces a lot of dough, you might want to use your best judgement in determining how much to put in your pan. But, the recipe does indeed produce a great tasting crust which very closely matches Papa Dels.  :D
