Durum wheat flour in Neo pizza?
« on: May 14, 2009, 02:42:37 PM »
Just watched a cooking show (Wolfgang Puck on FLN) that showed how Pizzeria Brandi in Naples makes their dough. They showed them use mostly Caputo flour and one scoop of durum wheat flour to aid elastisity. Is durum wheat flour semolina or just a hard wheat flour? What are some brands of durum wheat flour?

garyd,

There is often confusion between durum flour and semolina flour. To avoid further confusing you, you might read the Wikipedia entry at http://en.wikipedia.org/wiki/Durum.

King Arthur apparently sells durum flour: http://www.kingarthurflour.com/shop/items/king-arthur-extra-fancy-durum-flour-3-lb. It looks like Barry Farm Foods also sells it: http://www.barryfarm.com/flours.htm.

What is normally found and marketed as 'semolina' and/or 'semolina flour" is durum wheat that is milled to a grainy texture, more like sand than flour. Durum flour is the same durum wheat that is milled to a finer powder consistency.
