Pizza press, Roller and Sheeter
« on: April 23, 2009, 06:14:50 PM »
Hello Everyone,

I am currently taking some restaurant training and will be opening a pizza place soon . My instructor prefers the manual way of rolling and pressing the pizza . However ,if any one has used a pizza press, roller, or sheeter ,I would like to find out what they are used for and whether they make pizza making quicker or simpler. I personally cannot 'slap' the dough so i need to know if the presser can do this for me.

Thanks for your answers.

Sparkle.

Sparkle,

Maybe these article will help: http://www.pmq.com/mag/200805/topform.php and http://www.pmq.com/mag/2002summer/doughformer.shtml. If you register at the PMQ Think Tank at http://thinktank.pmq.com/viewforum.php?f=6, you should also be able to pose questions to pizza operators who visit that forum. The PMQTT archives also contain a lot of posts on the subject.

Good luck.

Peter
