Do you guys infuse herbs into your olive oils for some extra flavor?

I really am looking for a fruity flavor to go along with my pies, something that Una Pizza Napoletana puts into their pizza. Any suggestions?

Any good experience with any particular company?

I don't think UPN uses any oil in their sauce or in their pizza dough. I haven't had the chance to grab one of their pies, but UPN is on top of my list of pizze one my next trip to NYC.

From what I know, though, is that Anthony Mangieri is a purist when it comes to his dough...so I'd assume oil would be a big No.

From that video it looks like he puts olive oil on his pizza. Am I mistaken?

You're not mistaken.

But he doesn't use it in his doughs nor sauce, if I'm not mistaken.

 I get the Goya brand that comes in a can so it doesn't go rancid as fast as glass bottles. Last can, about a gallon cost me 30 bucks, very good.
