Lactose Free "Cheese"

Does anyone have any experience using any of the lactose free cheeses out there? Right now I am using a brand of Almond Mozzarella for my wife (who is lactose intolerant) but I was wondering if anyone else has a favorite non-dairy cheese that they swear by?

Hi Ryan I beleive that Pecorino Romano is made with sheeps milk and people who are lactose intolerent can have this cheese.I had a friend who was lactose intolerent and had this cheese with no problems.

I've used  Manchego a sheeps milk for my niece.
It melts a lot like mozz  and tastes pretty good.
I feel bad for your wife...stop torturing her with those tasteless black canned olives..

I have used soy mozzarella cheeses. I found that a blend of the soy mozzarella and regular mozzarella cheeses works well. I couldn't detect the presence of the soy mozzarella cheese in the blend.

Hey Pete,
 Thanks for the advice. I'm looking for tips on cheese replacements, again because the wife is intolerant, so using regular mozzarella cheese in a cheese replacement is a bit of a no-go for me. Unless what you mean to say is that you've served this blend to lactose intolerant people and they had little reaction to it?

Haha, as nice as it is of you to say so, she loves those olives! And we live in the middle of olive growing country too.. Thanks for the tip on the cheese.

To refresh my memory on this subject, I did a search to pull up the posts in which I discussed using soy mozzarella. Typical are the posts at Reply 5 at http://www.pizzamaking.com/forum/index.php/topic,887.msg8039/topicseen.html#msg8039 and at Reply 21 at http://www.pizzamaking.com/forum/index.php/topic,1841.msg16840/topicseen.html#msg16840. As I noted, I used it in pizzas to supplement regular mozzarella cheese. In my case, I was more interested in the low-fat, no-cholesterol features of the soy mozzarella. However, I had tried the soy mozzarella all by itself in vegetarian lasagnas, where the soy mozzarella doesn't need browning, and I would have not known that the cheese was not regular mozzarella cheese had I not made the lasagna myself. I suspect that the soy mozzarella lends itself better to a deep-dish pizza, as noted in the second post referenced above, than to a regular flat pizza that is assembled in the usual manner. One possibility would be to put the soy mozzarella down first and then the sauce and toppings. I have used that sequence before, but with regular mozzarella cheese, to make cracker-style pizzas.

I don't know if you have Cabot cheese available but Cabot Cheese is lactose free. 

From their faq's   :
Can those with lactose intolerance enjoy Cabot cheeses?
All Cabot cheeses contain zero (0) grams of lactose. Eating any aged cheese should not affect those with lactose intolerance, regardless of how much is eaten, because lactose - the major carbohydrate of cheese - totally disappears within 3 to 4 weeks after the cheese is made.

From the sounds of that faq other brands should be lactose free also.  So if she is lactose intolerant and doesn't have a casein allergy you might be able to use real cheese.  Cabot has Lactose Free printed right on their packaging so maybe other brands do as well.
