Keste sounds good...I think I'll try to re-create the Lardo at home.

It appears pizza is the hot food trend in NY. Unfortunately I live on the West Coast so I will only be able to salivate from afar. Nice article on the Roman style pizza. That is something I want to try out at home. I assume that it is the cracker style on our board here? Hydration levels in the mid 30's?? Any idea on the type of flour they are using?

Yes so it seems.There is even an article in Newsweek this week:

I've yet to visit most of the places mentioned,but the Roman style looks like it could be next on my list.They say they are using domestic flour,so i'll keep a look out for which one.
