I used up the last of our 50lb bag of GM full strength flour,I'm still experimenting with different kinds(isn't that 1/2 the fun?) our GFS doesn't stock any unbleached/unbromated flour in big bags but I was able to order this 50lb Pillsbury bag that isn't bleached or bromated.It doesn't list the protein% on the bag so I'm hoping it's fairly hi quality because they're calling it Bakery flour.I'll be using it mostly for pizza but also for bread.I did a search and didn't find anything on this so I thought I'd ask.

I suggest that you go to the General Mills Pillsbury webpage at http://www.PillsburyBakery.com/GeneralMills/SalesForce.aspx and look for the sales rep in your area and send that person an email asking for the spec sheet for the Bakery flour. That should give you the protein percent and other data on that flour. You can also call the sales rep and if that person is unavailable, leave a voicemail asking for the spec sheet to be sent to you (of course, you will have to leave your email address).

Thanks for your helpfulness Pete!! I used the link you provided to ask the protein% and the rep emailed me back that it's 12.6%.Seems like that's in the normal range for a good quality "bread" flour and close to the protein content of other flours that I've enjoyed good results for pizza's also.
