King Arthur flour and yeast question

In my previous attempt I used KA all purpose flour and Fleishman's Bread Machine yeast (in the jar). Should I be using the bread flour instead? What about the yeast? Can I make good NY dough with the bread machine yeast?
I am looking to make a 17" NY style pie.

I think the bread flour will be a better choice, not to say that AP won't be OK, but it has more protein so it will be a bit tougher and chewier. The bread machine yeast is great, and is what we all refer to as "IDY" (instant dry yeast).
