Hi Erasmo !

well this is a prefab. that i finished my self its around 75cm to 80cm diameter.

i live in Brazil, so things are a Little difirent here, but if you need any pointers, iam here !

Enjoyed your video very much. I wonder, though, about your spinning the pie by hand. A smaller peel might allow you to do that without having to remove the pie so much.

i know bill, its a pain doing that, but i cant find a smaller peel, maybe ill need to make one... GI has a distributor now in Brazil, but there is no products in stock yet..

Great stuff Lightly sauced as in Italy right?
I also did 22 pies last night ! using your recipe and 100% Caputo 00 flour 64% hydration, and 1 large batch of lehman NY style sir Lancelot at 60%
wow I have to say I am now a huge fan of this flour. Local guests said it was better than the  A Mano they tried! did your thermometer say 450?
and Yes you need that smaller peel It is a nessecity for me I was up to about 950 on the hearth ! 850 on the dome
New record of 60 sec. pie! ;D

Thanks John !! it was 450C or 842F...

iam after the smaller peel, but its very hard here....

i dont have that many flour choices here, so its very hard to see huge differences....

congrats on the 22 pies !!! my record was 15....

doy  celcius  sorry to be so silly!
I have done over 30 pies 1 time tons of fun but I beat the crowd! they were begging me to stop making them Ha Ha
I like about 900 on the hearth that seems to be my zone, and I flip the coals from side to side after 10 pies and add 3 logs to keep it cranking I had 450 at 12 pm this afternoon in the oven. Tonight I just put the leftover calzones in for about 45 min at 300-325 F in foil wahla
no fuss no mess to tired from the cleanup :-D

some times i hit 900 930 F and bake 60s pies...

wow 30 pies, you could almost open a pizzeria.. LOL !
