Dough Recipe for a Hobart 60 qt mixer

Hi,

If any one out there has used this mixer I would greatly appreciate a pizza dough recipe for a 60qt hobart standing mixer. I need measurements using either a 25 or 50lb bag.

sparkle, it's recommended that you seek help on http://www.pmq.com/tt as it's more specialized for commercial pizza operators.

Since you didn't specify a type or style of pizza you want to make, but clearly are interested in commercial size dough batches, you might want to take a look at the PMQ Recipe Bank at http://www.pmq.com/Recipe-Bank/index.php?additionalinfo=Pizza+Dough&areaname=&searchcustomdata= to see if there is a dough recipe there that meets your needs. Pizza Today also has a dough recipes section at http://www.pizzatoday.com/Recipes/PizzaDough/tabid/205/Default.aspx. Since both PMQ and Pizza Today have forums frequented mainly by professionals, you might also want to register there and post your recipe request.
