"2 stone" setup on the grill
« on: September 15, 2009, 03:10:00 PM »
Hi all,
I currently use fire bricks on a charcoal/wood fired grill and am getting a nice char to my crust, but it's not cooking at the same rate on the top.  I was going to weld some kind of frame up to place bricks above the pizza as well, hopefully getting some radiant heat on top.  My question is...what would be an ideal height to make this frame?  How far up from the pizza should the second layer of bricks be?  Thanks.

If it were me, I'd weld two or three sets of tabs so that you could move a rack for the upper firebricks up & down a bit until you know what is best for your setup. But probably the answer to your question is pretty close to the pizza because the grill has poor thermal retention. If a grill had better insulation, smaller & lower "door", ideal shape & so forth you could place the upper firebrick higher. Best results will likely be with the bricks 10cm or less above the pizza.
