School Lunch Pizza?
« on: October 06, 2009, 04:26:53 PM »
At the risk of getting banned from the board, anyone got a recipe that mimics those gooey rectangles of my long gone youth? Having visited my kids at skool, I know they still serve it.  :-[

The poured dough recipe that Peter referenced isn't what I remember. It's more like the attached photo and I believe they got it from GFS. Ahh the fond memories of such wonderful tasting yet horrible pizza. I am half inclined to buy a box of it next time I go there for cheese. I will post the ingredients if I do. Whether or not it's worth reverse engineering it is up to the people who are capable in that area.

Joe,

You might look under the pizza section of GFS's catalog at http://www.gfs.com/files/pdf/gms/ProductGuide.pdf. Examples of pizzas that are/were part of school food programs are the Fiestada pizzas such as sold by Schwan (and available from GFS): http://www.schwansfoodservice.com/Search.cfm?q=fiestada&x=7&y=11. Another example, is this one, also for school food programs and available from GFS/Schwan: http://www.schwansfoodservice.com/Products/ProductDetail.cfm?ProductID=78867&CategoryID=6061.

Peter,

When I went to GFS yesterday I couldn't find any frozen pizza at all, which was surprising. They had lots of frozen dough, just no pizzas. The second link you gave looks more like I remember it, but back in my day I think they used imitation mozz and it was heavily loaded with cubes of pepperoni. Either way, with the quality that my NY style has gotten to, I am sure I would be disappointed with any frozen pizza at this point no matter the nostalgic value.
