peter, after looking at the web site i see what you mean. they have pictures of dough being  brought out of a container that is captioned  naturally leavened . their web site is very informative.

Guys, what I heard was that in the past few years da michelle switched from using wild yeast to commercial yeast.  Not sure if it was temporary, or for good.
