Toasted Coconut Cashew Dessert Pizza
« on: October 17, 2009, 01:52:49 PM »
First of all, a word of warning: do not buy the toasted coconut cashews from Costco. Your life will be never be the same as you crawl on the floor looking for tiny crumbs once the bag is gone. They are that good if you like salty, sweet, coconutty heaven. Anyway, after a large of group of us polished off the bag in a few seconds (OK, it was just me), there was about a cup of little pieces of toasted coconut and cashew in the bottom of the bag. I could have just turned the bag upside down and dumped the crumbs straight into my mouth, but before I could put that brilliant idea into action, an even better idea popped up: I had a leftover ball of pizza dough!! So I kneaded all of the crumbs into the dough, brushed it with lots of butter, baked it, and brushed it with more butter. MMMine!!!!!

Man! I just notices this.

Oh my god. caramelized sugar, lots of it  :o I'm sure with the coconut in there...haha and butter. WOW, I already gained a couple of pounds just by looking at it.

This is the best use of leftovers I've seen.
