I'm remembering the best pizza from years ago. Back in Ashtabula, Ohio there was a place called "Felix's Pizza". They made the best pizza. The sauce was sweet but yet spicy enough and the cheese they used was sweet and melted but was NEVER stringy. Can't find anyone who knew them now, so I was just putting this question out to see if anyone knows of a cheese that melts on pizza but isn't stringy?
