Sometimes a simple cheese pizza is all you need!

62% hydration Lehmann dough with a mix of cheeses:  whole milk mozz, park skim mozz, monterey jack, a little bit of romano and a very little bit of mild cheddar.  [an odd mix but it was all the cheeses I had in my fridge!]

It was very good.

Great looking pizza!  I see you picked up a pizza tray. Did you get a screen too?

Yes I did!  I love it.  I made a monster 17 inch Papa Johns clone with my new screen.  There's a thread over in general pizza making called "pizza party pics" I think.  I has some good pics.

I haven't done a NY style with the screen yet.
