Title: Garden Fresh Tomato Pizza Sauce by pete
Yield: 1 pies
1 cups Liquid Tomato (from Garden fresh tomatoes)
4 tablespoons Tomato Paste
1 teaspoons Olive Oil - Bertolli Classico
1 teaspoons Balsamic Vinegar
1 1/2 teaspoons White Vinegar
1/2 teaspoons Honey
1/4 teaspoons Salt
1/8 teaspoons Ground Red Pepper
* Large Rubber Spatula w/4" blade.
* Large bowl for draining ground tomatoes into.
* Chef's knife
Create Liquid tomato from Garden Fresh Tomatoes:
1.) Wash tomatoes. You will need 1 pound of tomatoes for each cup of liquid
tomatoes that the recipe calls for.
2.) Cut up the tomatoes into about 1 inch by 1 inch pieces and add to blender
to make the blender about half full. Pulse in 1 second intervals to grind up
and liquefy the tomatoes. Do not allow blender to run for more than one second
at a time because it will create a pink liquid by introducing too much air into
3.) Place a wire screen type strainer over a large bowl and put in the ground
tomatoes. Then use a rubber spatula to stir and compress the ground tomatoes
into the screen to create the liquid tomato. Discard any leftover seeds, skins,
Note: You can alternatively use a food mill for this step above.
Cook the Sauce
1.) Combine the liquid tomato and tomato paste in the pot and cook over med-low heat for about 15 to 30 minutes to reduce it to a pizza sauce consistency.
2.) Add the Olive Oil, Balsamic and White Vinegars, Honey, Salt, and Red Pepper.
3.) Stir often and cook about 10 minutes more on low heat.
