These pizze were made in strict accordance with the "disciplinaire" for Napoletana pizze STG.
Baked in a Woodstone (wood burning, no gas or infrared b.s.) for less than 90 seconds.
The oven could have been a little hotter, but I feel that these results were pretty good.
Someday I would like to try one of the real
Neapolitan ovens but for now just woodstone....
Oh, these tasted just as good as they looked.
