Hello friends
found this forum looking online for recipes of good pizza doughs
here in Brazil i dont find any caputo GF flour.. and when i find it.. its VERY expensive.. something like 15 euro .. for brazil is VERY expensive ( 1 euro = 15 real )
So.. i looked for some recipes and got MINE recipe of a gluten free dought..
I use a bread machine to incorporate all of the ingredients. and open with a wood roller

The recipe:

1 and 1/2 cup of RICE FLOWER
1 and 1/2 cup of TAPIOCA SWEET FLOUR or MANIOC STARCH, SWEET MANIOC STARCH - i dont know how you guys call. here its POLVILHO DOCE
1/2 and 3/4 of water
10 grams of biologic yeast
1 teaspoon of SALT
2 teaspoon of SUGAR
2 teaspoon of XANTHAN GUM
1 teaspoon of PSYLIUM
4 tablespoon of OLIVE OIL
2 eggs

1. first i start mixing all the dry ingredients.. and put them in the bread machine bowl
2. put the water in the microwave and heat for 40 seconds.. and then i add the yeast , mix a little bit and wait
3 . after mixing the dry ingredients.. i put the water slowly to incorporate
4. after incorporate really good the water i put the 2 eggs
5. after the eggs incorporate i put thr 4 tablespoons of oil and wait the mixing

after this i keep looking if the dough is good... if its sticking in the fingers and at the bottom of d bowl.. and if its very dry i add little water or oil to incorporate all .. if its too sticky i add a little more of rice flower

after the dought is good for me ( not sticky and not very dry) i take out and let 20 minutes to rest

after rest i open then in 2 big pizza disks or 3 medium ( so i can do 2 salty pizzas and 1 sweet )

after open i put in the tray, preheat the oven at HIGH and let them for 10.. 15 minutes pre heating.

after i put the tomato sauce and do my fillings (brazilian style )

its good.. the thinner you do the dough better its stays!

here are some picks
hope u enjoy and try at home

someday i will buy the CAPUTO or other flour mix and do better pizza

SORRY FOR MY ENGLISH!
