Lamb on Pizza

We roast lamb then chopped and put on pizza
But it really get chewy

Anyone has anyidea how to pre cook lamb to put on a pizza

I do a scorching sear on loin chops and slice carpaccio and add it at the end of the bake just to warm up.  Feta, kalamata, garlic, thyme, white truffle oil.

I used to work a block from a Bosnian pizzeria that made pizzas with thin cuts of lamb gyro meat. They were wonderful. Also used some cheese that i forget the name of, which originated from some Serbo-Croatian industrialist failing to figure out how to make gruyere.

That place has been gone for years now. Very sad story.
There are many kinds of pizza, and *Most of them can be really good.

The correct answer here, is to smoke the lamb for 2-3hrs, then wrap in foil or butcher paper and continue cooking till the lamb reaches 190f. Almost all the fat renders, leaving a pulled pork-like texture and an incredible umami richness.
