If by "made huge sheet pans of pizza for rectangle lunch pizza," you mean the opened a box, took out the fully prepared sheets of pizza, put them in a pan, and warmed them in an oven, then yes, I remember. I doubt there has been any made from scratch in the past 75+ years.

My lunch ladies cooked everything from scratch.  Unfortunately, we had pizzarettes - sauce and cheese on a hamburger bun.  Overall, the food was really good.  Those ladies could cook.

I remember a lot of Tator Tots.  Don't think they were handmade.  :D

J.R. Simplot developed a high speed french fry cutter that basically fired mechanically peeled potatoes out of a canon through a grid.

Worked great but produced a lot of little chunks of potato.

He invented the tater tot after touring a particle board factory. McDonald's didn't want it.
There are many kinds of pizza, and *Most of them can be really good.

It's a water-knife. The potatoes flow through a pipe with water. The grid is in the pipe. The potatoes are steam peeled. Tater tots were invented by Ore-Ida, not Simplot.

I tried this recipe for "Gannie's" School Lunch Pizza. It's delicious also just as I remember it!

Nice timing on this thread being bumped. I was planning to post this: a nice video was recently posted on recreating school lunch pizza (currently with 1.6m views in 8 days). I'm very intrigued, especially the herby sauce.

I don't remember the crust being that thick or floppy.

Mine was. Like a soft Elios that had been sitting for a bit.
