Picked up a TurboChef (TC) Fire Oven at the auction...

Got it for $1k so pretty cheap. Now I need to experiment with it.  :chef:

I find it interesting the the oven is marketed essentially as a non-vented "artisan style" oven (what exactly is an artisan oven anyway?) that can reach 900 degrees. So they're basically saying neo without saying neo.

The TC Fire oven has no deck - its open inside. Pizzas are placed inside the oven on a 14" screen, I assume for fast convection cooking on the bottom of the pie.

I've always cooked neo style, so I've never used screens before. In fact the screens didn't come with oven, so when I went to the TC website to verify the correct size to order, I noticed they have a stone available for it as an option. All the videos I've watched of the Fire show the screen being used to cook pizza, not one shows baking on the optional stone.

Now to my questions:
1. Has anyone used a TC Fire oven before?
2. Did you use screens or the optional stone?
3. Any reason to spend the crazy money on the "official" TC stone or can I buy any good stone of the proper size?
4. Any recommendations on stone thickness? The TC stone appears to be about 1/2 inch thick.

If anyone is interested, I'll post my experiments with the TC Fire. I also have a TC Tornado (Subway model) and it came with a steel in the bottom. It actually does a passable neo style pizza, albeit in more like 2:20 then 1:30. Just not as hot as a true neo oven. I bought a stone for the Tornado, but I'm still tweaking the parameters. The steel worked great, I may go back to it.

Maybe I'll do a pizza comparison video on the two TC models.

I really like that oven. They have a bunch of them at the airport in Houston. If they are on their game, it can bake a pretty good pizza.

How does the oven work? is it a stoneless oven that replicates the result of bricks with direct heat? Seems like a pretty ingenious design

Essentially its an extremely high-temp convection oven that has individually controlled upper and lower heating elements. The max temp is actually 842, not 900. Cook chamber is only 3.5" tall so heat is concentrated on top of the pie like a good low-dome neo brick oven. See pic below.

I ordered a 14" x 5/8" round stone for it. I'll do some side-by-side comparisons of screen cooked (no stone) vs. cooked on the stone. I may even try screen cooked ON the stone!

I just looked that up on Amazon. Too frigging expensive for me!! And it requires a 208-voltage line to work!! No thanks!!!!!!!!!

Turbochef fire is a commercial appliance. Not intended for home use. $1000 is a steal for this oven
