Freezing DSP

Hi all,

During covid times I had quite some success at making frozen Neapolitan pies. The dough & sauce were baked in the wood-oven, then fresh/raw toppings were added and the pizzas were frozen. They could then be baked directly from the freezer into a normal oven in less than 10 minutes.

Have you ever frozen DSP in a similar way? (baked crust + raw toppings) What were the results?

The hard part would be the pan - are you going to lend out your Lloyd's/Webstaurant pan to the frozen pizza purchaser?

Unless they have the same pan at home, how are they going to bake it to get the iconic frico cheese walls?

There's a Motor City Pizza Company and they sell frozen Detroits in supermarkets. They come in one of those fancy black reheat disposable pans.

I've often thought about offering something like this, but the shrink wrapping crushing the pizza and the reheat at home without the proper pan are holding me back.

Would love to hear if you or anyone has a good solution.
