Alta Cucina vs 7/11 Tomatoes

Which tastes better in your opinion?

I prefer Alta Cucina.  7/11 borders on too thick.

7/11 is ground with skins, I don't like skins.

Alta Cucina is sweeter. I actually like blending Alat Cucina 50/50 with Tomato Magic (I think that's pretty common). Tomato Magic and 7/11 are the same tomato, one with skin, one without. Alta Cucina is a different tomato.

That is interesting, but they taste noticeably different so it makes sense that they're different tomatoes.

Alta's are the only ones I have not tried, not easily available for me.

Pretty happy with Valorosos, I did really enjoy the last can of Tomato Magic.

I live about 160 miles north of Modesto and I have not found a source for Stanislaus products in Chico. I order them on Amazon lol

7/11 run through a food mill takes away the skins and have a great taste and thinness. Used to use Alta Cucinas but now use 7/11. Both are good

When mixing the Alta Cucina and Tomato Magic,  do you use the whole can of Alta Cucina or do you only use to tomatoes and not the juice?

Try Smart & Final. They carry the 7/11 ground tomatoes.

It is funny..... the info on the website vs calling vs reps.  My Stanislaus rep who has been to the factory many times and in the fields to see the tomatoes being harvested says that their "secret" is that they only use one type of tomato but process it in different ways to make valoroso vs alta cucina etc. 

I have never looked at the differences of the two tomato shapes when I have opened a can of valoroso next to a can of alta... now I am doubting him and it would be interesting to see the difference.  I know that they do taste very different and the valoroso have a more cooked flavor and a much thicker puree.

I actually don't think they are closer, I think they are the same tomato. I swtiched from 7/11 to Valoroso about a year ago and there is no difference that I can tell in my sauce. We immersion blend anyhow, and the Valoroso are about $10 a case cheaper for me so, and using 2-3 cases a week, that's a huge savings at the end of the year.

I wouldn't be surprised if that was the case. It would be great for efficiency.

I suspect it's not just different processing but also that different levels of ripeness go into different products. For example, tomatoes too ripe for whole peeled like AC make the best pressed products.

You could be right, and I don't have access to Alta Cucina here but I have bought them in the past and I believe they definately looked like a plum tomato, whereas the Valoroso seem to be a different shape. But that could be my mind playing tricks on me. I haven't opened a can of AC in almost 10 years.

Last time I did it I dumped the entire Alta Cucina can into a 6qt cambro and then the entire Tomato Magic can in. Then immersion blended. I'll probably do that for all future 50/50 blends.

Next time I just use Alta Cucina I'm going to strain them and just blend the tomatoes and see how that is.

i dont use the juice, i stopped buying alta and switched to tomato magic bc i just prefer crushed tomatoes, along with the fact that it is a ridiculous amount of juice in the alta.  i measured it once and it was like half the can or something outrageous like that
