Hello, Ive been eyeing the KYS 7+  mixer for a bit now, has anyone purchased one? It checks all the boxes on my needs/ wants list but i have a bit of a concern. Up until about January, as far as I can tell, they had a web site that sold not only mixers but Pizza ovens and other things and then with no announcement it just seems to have closed. Now i see they have popped up only selling one mixer and only to the American market and nothing else, perhaps I'm being paranoid but i am feeling a bit of worry over ordering. Anyone have any experience with KYS since the new model and website has been up? My other possible purchase is the Alpha AVS 10 but know almost nothing about it either except for a couple of commenters here on pizzamaking forums.

I have had a similar thought process choosing between Alpha and Kys mixers that I explained here ( Reply #19):

https://www.pizzamaking.com/forum/index.php?topic=82801.0

I ended up ordering AVS-10T because the dealer is located in Canada as I am. Unfortunately, the mixer had two problems and I ended up sending it back. The replacement should be arriving this week. I will post my thoughts after receiving it. To me, the after sale support seems very important. I would want to make sure the issue will be properly taken care of if there is any problem with the mixer. This is even more crucial if the dealer and the buyer are not in the same country because the cost of return shipping can be very high for this big heavy box. The buyer needs to make sure the dealer will cover the return shipping cost. So I would not buy directly from China as getting after sale support may not even be possible.

On another note, the Alpha mixers are heavier than spiral mixers of the similar size. I weighed my Alpha mixer (AVS-10T) and it is heavier than their stated weight! They state it is 90lbs but I got nearly 100lbs! I am suspecting this might be true about the AVS-10 model too. The 10liter bowl also appears enormous for household usage. Kys mixer is lighter according to the stated weight.

Update: As stated before, the first Alpha mixer unit I received was defective and returned. The second one turned out defective too. I returned that one as well and cancelled the sale. So as of now, I still have no mixer. Not a good experience with the brand. Not willing to deal of shipping again for such a heavy device. I may travel to vendor's city some time during the Summer (it's 6 hours drive from where I live). In that case, I may buy it in person only after examining the mixer and making sure it is functioning as it should. On the positive side, the vendor was very collaborative and communicative. I am however debating with myself now if I can trust the brand regarding QC issues. Sure, they are noticeably less expensive than Sunmix and Famag.

Wondering if you ended up buying a Kys mixer?

6 hrs is not too bad. Give it one more chance [emoji3].
I fetch my famag from Poland to UK in my car, when visiting parents for Christmas, 1350 miles each way.[emoji3]

Yes, I ordered the KYS, I cant say how well it works at this point however because ive had a bit of a nightmare so far with DHL shipping. Hope that is cleared up soon and i can report on how the mixer itself works.

The Kys 7+ arrived and I have now made dough with it and love it, it is very quiet and strong and  not much bigger than a kitchen Aide with lift bowl, weight is not too bad and seems well made. I've always struggled when trying to make dough in batches of 2 to 3kg and this did the job so fast i was very surprised, dough came out very elastic and left no dough in the bowl, clean up was a breeze. now i can whip out new dough recipes with no problem.

I ended up with a used Sunmix 6 basic mixer as I just explained in another thread. I haven't used it to make dough yet but it seems working fine like a brand new machine. I am not sure if this was a better buy than a KYS mixer but I am happy with the purchase.  :)

A month later - how are you finding the KYS Pro Baker 7+?  I am contemplating getting one but am kinda on the fence.  For me, a new Famag or Sunmix is at least double the price and that's not including shipping!

Heya,

Did you get them on https://kysprobaker.com/ or https://kysnorway.com/
Ordered the 7+ on the first site the 12th, it was cheaper to pay in $. Site says 15/20 days

Says it's coming from Germany ? No update yet on the tracking.

Meanwhile looking for more review, found out the original version with no branding for the newest model , HM-5TD 5l 2kg // HM-10TD 10l 4KG . Video from the site

Don't know what to think about it. It is way cheaper at first but with shipping it ends the same. Unless you buy several and sell them later.

Hopefully, ordering from a EU company means better warranty in case anything goes wrong, no import tax to worry about, and a better service (english?). They also added the ice belt, don't think it is in the package with the original retailer

I would have gone for the New version Easy Baker 5 but also thinking about making bread, I thought it could be small, and KYS doesn't offer lifetime warranty on this one's motor (even if the chance of breaking it is really low...)

Wish there was a Easy 7 version but hey, it's too late now

Hello All!

I got my KYS 7+ this week after ordering on their US website. Took exactly 4 weeks to deliver to Canada with the cheaper shipping  option.

So far the machine looks and functions great. Very silent. I've done a 1kg flour batch of dough at 63% hydration and I had some issues with the dough climbing the spiral but I'm sure this was my problem. The recipe was a 100% biga recipe with a 1022g flour, 540g water@24C and 2g ADY left 16h on the counter.

I added the biga in the mixer and added 22g of salt the slowly dripped 100g of water. I think my Biga was too warm to start as I started my mix at 24C. Next time I will refrigerate the biga one hour before making the actual dough.

I think I also added the water too quickly at the beginning.

But the KYS Probaker 7+ felt great. Keep in mind this is my first spiral mixer so I cannot compare, but this is day and night vs my old kitchen aid!

Next time I will do a 2kg flour batch to see if it helps 😊

Hey

Finally got mine too, took about 3 weeks.
Did 1Kg Caputo Cuoco 67% Hydratation.(First time with this flour). It was hot inside the previous days so I put flour in fridge, used fridge water and ice belt..
That was probably too much, for the most part the dough was 17°c, finished at 24 after I speed it up a bit
Few hours RT, fridge, then out 3hrs before use, but I reballed them... Shouldn't have, they were too strong.. My fault...

The only minus, is about the wheel.
Looking at the bowl speed, it seems correct with specs given, ~3rpm /  ~50rpm for spiral when it starts, l, and about 29rpm at max speed.
But sticker starts at 80+, max speeds about 360, going higher doesn't change speed, and the wheel can't reach the 400.
It's not a real issue, but I like when things are accurate. And doesn't cost much to fix at their factory

Is yours better ? @TheOnlyTruth

The0nlyTruth

@WhyNot : I just checked mine and it is the same as yours, starts at about 80 and not change after 360rpm.

I might actually measure the speed at min/max and make a sticker that is more representative. That could be an easy fix by KYS.

I guess if our only issue with the machine is the sticker for the RPM not being accurate, we're pretty happy with it 😂

I did 1kg of flour yesterday and I'm trying again with 2kg today, just want to play with the new toy 😁

@The0nlyTruth I had issues with the dough climbing the hook also. Again, I am pretty certain this was my fault. This is my first spiral mixer and I feel it will take a few goes to really get to know the machine.
My first 3 doughs ended up in the bin. I kept over heating the dough and it was turning into a soupy mess. I got in touch with KYS for advice and they were very helpful. They gave me good advice about speed control.
My 4th attempt turned out great. I used ice water to keep the temperature under control. I also did a 30 minute autolyse. The dough did climb the hook once, but I used my hand to pull it back down and increased the speed and this seemed to work.
Definitely a learning curve for myself with this mixer, but I feel it will be grand.
Dough was 65% hydration. I will stick with 65% until I become more comfortable with my process.

LeeMajors

Another update on this mixer.
Made a batch of dough yesterday and it went really well.
Went for 68% hydration this time.
Balled it up today and will bake tomorrow. It has turned out really well.

Here are my steps for anyone interested.

Added 1kg of flour to the bowl (800g of organic bread flour and 200g of organic stoneground bread flour)
3g of instant Caputo yeast (0.3%)
Mixed this in the mixer for a few seconds just to mix it up.
Then added about 600g of ice cold water at a speed of 80rpm
As this mixes I gradually added 50g of water to make sure all of the flour was fully hydrated and no dry flour at the bottom of the bowl. This took about 4 minutes in total.
Then I turned the machine off and let the dough rest/autolyse for about 30 minutes. I covered the mixer with a damp tea towel for this stage.
Then I added 30g of fine sea salt (3%) and turned the machine on at a speed of 120rpm for about 2 minutes, gradually adding 30g of ice cold water.
Then I increased the speed to 160rpm for roughly 5 minutes or so, then increased the speed to about 200rpm until the dough temperature reached between 23 C and 24 C. I would say the total mix time after the autolyse was around 9 or 10 minutes.
The dough came out really nice, no problem passing the window pane test.
Looking forward to pizzas tomorrow!!!
