So i noticed at the grocery store that the 18g packet of Platinum Instant Sourdough costs less than a buck.

Sure, 1lb of SAF Instant is less than $6 here, but fine, ok, whatever.

I'm not sure I want a full-blown sourdough pizza crust. I don't have much of a use for a full loaf of a sharp san francisco style sourdough bread.

But i do prefer a poolish, and maybe a *little lacto in the preferment will add some nice notes?

The label says to sub the 0.63oz packet for 0.25oz of yeast. They don't really specify whether it is IDY or ADY. Seems like maybe this product is 1/4 instant yeast and 3/4 dried sourdough starter.

That's basically a recommendation to use 2.5x the weight of the yeast you're using.

I use about 0.05g of IDY vs. 200g of water and 150g of various home-milled flours for my preferment so i guess it is pretty cheap to 2 to 3 times as much for just a little tang?

I use it for different things from time to time and kind of like it. I talked to SAF about it; it's a blend of IDY and fermented rye flour. It doesn't contain any viable LAB.

I was first introduced to this product years ago at the Vegas Pizza Expo. I wouldn't say it was disappointing. It is what it is. Is it a sourdough starter? No. Does add some complexity to an IDY fermented dough? Yes. Like Craig, I use it every now and again and enjoy it when I do. If you should decide to try it, pay attention to the ratio of this product to straight IDY. You need maybe 25% more if I remember correctly.
