We do fairs and festivals only, operate 9 to 12 weeks, mostly weekends and a few, two, are 4 day fairs. Help is hard to to find and train so it is the chick and I. She is amazing, keeps pizzas from burning takes the money, and anything else needing done. At fairs we put out about 350 per day. This is the pace for a 12 to 14 hour day at a fair.,the starts and does mot stop until the Midway closes. Then we feed security and the carnies before shutting down around 1am. A two day event we can usually count on 535 to 575+ for the two days. In August we will do about 4200 pizzas. We are not a big operation but we get the job done.,it's a passion/hobby gone wild. 10 3/8. We get them from Costco when they are on sale.  Pizza boxes are expensive, a waste of space, and they have to be assembled. The pizzas are ate right away so there is no need for them.

Thanks Craig. Would love to make to one of your pizza summits one day. I use your SD prediction chart all the time. it is priceless.

We are actually thinking about putting a couple of cameras inside and a monitor outside so people can watch live as pizzas are made and cooked, We attract lines that are up to an hour and 45 minutes at times if you can believe that, but they are mostly a steady 30 to 45 minutes all day long. We would call it dinner and a show.When an event has live music they tell me as long as they can hear the music and are in line with friends its all good. Agreed, Pizza making is fun and entertaining.
