Detroit Style Pizza Pop Up

Every couple of weeks, I make a few DSP's for some of the tenants in my building. It's been a fun process for sure. I do a couple of pies. The pie in the picture below is my Pizza Margaret:

Red Sauce
Pepperoni
Mozz blend
Parm Reggie (post bake)
Basil (post bake)
Mike's Hot Honey (which every seems to love lol)

This batch turned out pretty fantastic.

Dough: is rath simple actually. It's a 10 minute bench rest, followed by a two hours bulk with two or three coil folds, into an 8 x 10 Lloyds pan for another 2 hours and we're ready to go.

This is perfect.  Totally flawless crust.  Your preparation and proofing method seem good.
