Overnight Focaccia

Grease Wheel

I've no focaccia wisdom to share but lots of admiration for the bakers on this thread. Below is my focaccia formula (DD) but I got playful. This dough was near batter from mixer 'til middle rack.

1 TSP (1/2 if overnight) ADY
294 G Water
420 G AP Flour
3 TBSP SEMOLINA
2 TBSP Potato Flour
1.5 TSP Salt
1.5 TSP NDMP
1.5 TSP Sugar
1 TBSP Oil

14" Round Pan
450° 17.5 Minutes
