Saporito super heavy duty sauce with basil

I love the flavor of Saporito super heavy duty but can't seem to get the right consistency when cutting down with water. What is a good ratio to start with? Also should I add anything else such as carrots to take away some of the acidity. Your help is greatly appreciated!

I believe Tom used to recommend some parm cheese to cut the acidity of tomatoes.
