So a week or two ago, the NY Times published a list of 22  US pizzerias not to be missed.

While it seems like there's always a new best list, when the NYT chimes in...well, their word is gold. Witness Razza and Mama's Too's skyrocketing successes.

While Razza, Young Joni and Bianco were listed, there were some new names too.

From a table at a weekly farmers market to a now-expanding brick and mortar shop in just a few years, comes Hapa Pizza.  Featuring Asian fusion 12 inch Neo hybrids the already successful shop is launched into high gear by the article.
 
Stopped by for lunch last week but they were sold out..no surprise there. Talked briefly to Aaron Truong, pizzaiolo and co-owner with wife Natalie. Nice operation..small line moves like clockwork. Not a single wasted motion.

Return visit on Wednesday. The menu is inventive and sounded great..wife and I shared a banh mi pizza..looked good  but I'm a tough  customer.
Okay, yes!! A win all the way. Crust very light and open. 2 Day CF..very well proofed out. Bake in high 700s about 2.5 minutes. Topping balance just right
Vibe and service also top notch

Hapa Pizza...big league shop.

PNW, even for a Wednesday lunch it was totally jammed. They close for lunch at 2 but 1:30 arrival on first visit meant no pizza for us.
Right, Kori. Carrots and cilantro post bake and just the right amount of Sriracha mayo.

Went today @ 11:30 no big crowds. Employee running register and taking orders was not very knowledgeable. They don't properly clean and I sat on a sticky bench.

Had the Banh mi, less char than your pizza in pics above. We both agreed that a sandwich would be better than a pizza with those toppings. You could barely find any meat. The crust was fine, but I'm so used to whole wheat that I found it to be bland. Wife liked the crust.

Oven was a gas fired rotating oven, not wood burning for purists, I don't care either way on that.

No doubt an official banh mi on a crisp baguette is a better bite...this is more banh mi- inspired.  The day I went, the crusts all looked really.good with light char.

Saw them on YouTube and it looks like they are doing great.  Cool success story!
