What do you think? Not that it is super impressive but it looks pretty good. i wouldn't mind a little of that. lol. is it lightly melted fresh mozz? Cut how?

Yes looks like fresh mozzarella and not baked too hot to char.

I'd guess really thinly sliced fresh mozzerella.  Maybe not very wet mozz, but not dry either.
Maybe a higher temperature bake, less time.

FYI: I could be totally wrong
