Hi

I have a pizza setting on my Panasonic bread machine which says it takes 45 mins!! to make a dough ball. Of course I let it run for approx. :pizza: 10 mins or so. The paddle is tiny...

I would like to know how long it should take to make the dough?

i just realized that the bread machine is total #*%$ %$# to make good dough. When I used to make chappati dough (kinda similar to pizza dough without yeast) the dough always seemed to not rise when cooking and a little flat. It made total %$# bread the worse i have ever eaten. And it makes the dough uncooked, I did the window test on the dough. The gluton was like in the baby nappy stage lol. For gods sake people dont use a bread machine to make pizza dough!!!!!!

take the bread machine, sell it and put that $$$ towards a mixer, or mix by hand with some stretch and folds
I SMILE AND WAVE....

^^^ stretch and folds for the win.  It's so easy and effective!
Oven: Oster 10-in-1 Digital Air Fryer/Toaster Oven Combo (Max Temp 450F) - Steel: 12x12x0.25" A36 - Levain: Natural (started 11/7/23) - Mixer: Couple 'o Hands

Yes i think im gonna have to do it by hand. I been using bread machine this is what i found:

The dough is hardly ever kneaded right it is either over done or underdone..

the results usually are an uncooked doughy cooked dough or you have to overcook it so its is chewy and brittle.

I mean its basically the dough ball get porn cupped by a women paddle. lol

It's funny, I have had the opposite experience with this situation.  My brother wanted to get into the pizza making hobby and already had a bread machine.  It is $85 new lol!  I went to his house and I used it only for the mixing cycle.. beware because next is a heating cycle and you don't want that to happen.   Anyhow, I used cold water and made a recipe I am familiar with.  It kneads for a while and then gives the dough a rest (without heating) and gives it another mix.   I stopped it a bit before it was supposed to be done..I went by the look of the dough.

IT WAS AWESOME!!!!!!   I wish I had pics... but trust me this was very high quality dough.  So, it can be done.  I dont know about all machines but his is great.

I think depends on the dough hook mine is small on bottom of the bread machine. But i have heard bread machines are basically dead weight nobody is buying them anymore maybe for good reason? I got mine over 3 years ago.
