Hi all,

Just want to let anyone in the Edmonton area know that the Italian Centre was kind enough to respond to my request and is now stocking Caputo FioreGlut flour, the 1kg bags!  Price is around $12 a bag. They in turn are sourcing it from Valoroso Foods in Vancouver.

Not yet, It comes with a recipe on the bag that I used, and it was "okay", pretty good but not super amazing--mind you, I was only able to bake it in my home oven up to 550 degrees on a pan, so really not what it was designed to do. I've had pizzas made with the FioreGlut in a WFO, and they were unreal delicious.

If doing the bag recipe again, I would add a little sugar and maybe just a little baking powder. The dough came out very white, even after baking.

i found a video of maestro Vito Iacopelli stretching a gluten free pizza

he also released a video on how to make the dough

however he uses 5 stagioni gluten free
