CK is a vegan restaurant.  While pizza is not its main focus, it has a section of the menu dedicated to gourmet pizzas.  Initially, I was anxious at the $19 price for a personal pie and whether I would find it edible.  However, it was a fairly large portion size and it was one of the best pizzas I ate my life.

The cheese is replaced by macademia nut spread.  The tomatoes are fresh (and baked); very high quality tomatoes - not all tomatoes are created equal.  It had dates for sweetness, some spices, perhaps a light vinagrette dressing and a large helping of arugala.  It was great.  The best feature, of course, is the crust.  It uses a mixture of real flour and almond flour.  It's airy, soft inside, crispy on the outside, sturdy.  One of the best crusts I've tasted.
