Help: Best Thin crust Pizza recipe for home delivery

Hi Guys,

Namastey. This forum is a goldmine for pizza lovers and would want to thank all contributors at outset.

We have a small pizzeria in India and sell both New York Style and Thin Crust Pizzas as per customers choice of crust. We have more or less sorted out the new york style crust and are getting good response. This was the only crust we served originally but on customers demand we also started to serve thin crust base. For operational efficiency we have till now used the same dough ball which we prepared for new york style pizza and flattened it out using a rolling pin, docked it, par baked and then put sauce, cheese and toppings and baked. It is working but the crust goes limp and soft by the time pizza is delivered to customer mainly because our new york recipe calls for 61% hydration with  .5% fresh cake yeast

Now that demand for thin crust pizzas is almost 25/35% of total pizzas sold we feel we should prepare a separate batch of dough for thin crust pizzas.

Can someone help us point to the recipe which will be best considering that we are mainly in "home delivery business"  and pizza will be consumed after approx 45 minutes of its preparation. Also forget to mention that we have a stone deck oven and bake at 570 degree farenhiet

Do you have anything in your pizza boxes to mitigate steam?  That's probably a bigger issue than your dough formulation. http://makingfoodsbetter.com/

Hi Jsaras. Our pizzas are put in a normal corrugated pizza box with some air vents at back of box. Further the box is put in hot bag so that the pizza can remain hot while it is being delivered to the customer. The hot bag surely has a pressure cooker effect on the pizzas but I think all delivery outlets have to live with that and customers ordering also understand this fact.

Also the pizzas before being placed in box are placed on a corrugated sheet which perhaps allows some steam to vent out. <attaching some pics>


I did take a look at the pizza screen savor link and will check its availability in my part of country.

Jsaras thats a very valid issue you have raised but that involves delivery and packaging logistics. I will certainly see how that can be best worked out. Presently I will appreciate  if someone can point me to the "best thin/cracker crust pizza recipe" which is suitable for our conditions. Thanks
