Settebello - Oxnard, CA
« on: February 20, 2017, 08:43:58 PM »
We had lunch there today.  It's a VPN pizzeria, so no surprises as to what the pizza is all about.  Today's pizzas weren't as good as our experience a couple of months ago, but it was still better than any of the pizzas we've had at the Pasadena location.  Photos posted below.  I'll leave it to the Neapolitan geeks to dissect the merits and faults of the pizzas. Here's a link to a video of them baking pizzas in their Stefano Napoli oven:

Things have never been more like today than they are right now.

I wish the pizzas looked as good as the restaurant.
They look like the floor temp wasn't quite there

How long did you have to wait for a table?   :-D

Unless you went at an odd time, they look like they are in a bit of trouble.

We got there at 12:30, right in the middle of the lunch rush!?!  The undercarriage looked paler than a clown's _ss.

When we went there a couple of months ago for dinner and it was considerably better.  The margin between passable and great is quite narrow.

From the video it looks like amateur hour!  I have been there before and the pizza was good, but it looks like it might have gone downhill.

Jonas,

Maybe you already know this, but Settebello, whose real name is Brad Otton, was a member of the forum and posted actively for a while. His profile (https://www.pizzamaking.com/forum/index.php?action=profile;u=605) does not show a lot of posts but that is because he posted under another name (Sumeri), which he changed to Settebello. Brad was a former USC quarterback who decided to go into the pizza business after an attempt at pro football came to an end because of injuries. You can read about that part of his life at http://articles.latimes.com/2011/apr/16/sports/la-sp-crowe-20110417.

It seems that he is doing well, and that is good.

I struck up a conversation with the pizza maker, but it was immediately apparent that he wasn't particularly knowledgeable on dough making.  I thought that VPN pizzerias had a training standard for employees of certified restaurants, but perhaps not.

My wife and I had dinner at Settebello in Oxnard after a day of wine tasting in Ventura County.  They were really on their game.

I've never seen anyone load that many pizzas at one time in an wood fired oven, nor that far away from the heat source.  But I'm not from Cali.

The video in the earlier post was taken during a lunch visit back in February.  That guy was clearly not as skilled as last night's pizzaiolo

I want that salad.

That was the panzella salad with speck.  It was excellent.  The meatballs were good, but not as good as Pizzeria Mozza's
