Wood Fired Oven - Bob's Red Mill Organic All Purpose

Unfortunately ran out of Caputo "00" flour and looking to fill in with Bob Red Mill Organic All Purpose. Wasn't sure if this was a good substitute that could withstand the high temperature. I see that it is unmalted with a 11.8% protein content and figured it may be a decent substitute. Any advice, or experiences with this flour?

It's worth a try. Might work well.  You might dial back your hydration a point or two because of the slightly lower protein.
