My grandma makes these great yeast cakes every Easter morning. They are addicting. I found out that they are really nothing more than your basic pizza dough.
This works great with that extra dough you have in the fridge the morning after or for dessert.
Let dough come to room temp.
Roll out into ovals about 5 inches long and 3 inches wide.
Cut in half shortways so you have two little 'pockets'.
Let rise for 20-30 min.
Lightly flour and pan fry till puffy and golden brown ~1min.
Drain oil and let cool.
Cut them open along top of pocket, the straight edge and fill with your favorite ingredients. Some of my favorites are butter, honey, jam, eggs and bacon, potatoes.
Just another way to enjoy your dough. Good luck!
