This was exceptional. I made my English Toffee Brittle (https://www.pizzamaking.com/forum/index.php?topic=24332.msg254415#msg254415) and mixed in corn pops. Unlike using marshmallows to make a rice crispy-like substance which got soft and chewy, this stayed light and crispy. Next time, I'll use a higher ratio of corn pops.

My 300lb 15 year old (starting varsity o-line) says I don't feed him enough  :-D and that's why he had to make deep-fried chocolate chip cookie dough. He made the dough and batter from scratch, and they were quite good  ;D

Just having this Frozen Summer Peach Ice Cream Surprise, here is the recipe:

1 ½ Cups of crushed/crumbs vanilla wafers, divided

2 ½ Cups sliced fresh peaches, or frozen peaches if they are out of season. Fresh peaches work the very best!

½ Cup sugar

1 Tablespoons of fresh lemon juice

½ Tablespoon of a really good vanilla bean paste

1 Cup of softened Blue Bell Home-made Vanilla ice-cream if it is available, if not use a very good store brand in your area. If you have your own ice cream make you can make your own vanilla ice cream and use it if you prefer. This is an easy to make recipe, so we are using a store-bought ice cream.

First, you will spread half of the vanilla wafer crumbs in the bottom of an 8 or 9-inch baking dish. In a food processor or a blender, you will add the peaches, sugar, lemon juice, and the vanilla bean paste. You will run the blender or food processor for about a minute. You will stop the blender at least once to scrape down the sides to make sure you get all of the peaches and sugar blended until it is a smooth texture. You will then pour the peach and sugar mixture into a large bowl, and gently fold in ice-cream. You will then pour over crust and sprinkle any remaining cookie crumbs on top of the peach dessert. You will then cover with plastic wrap and freeze for about eight hours until good and frozen. When you are ready to serve this peach dessert you will then remove it from the freezer and let it sit at room temperature for at least 15 minutes before serving. You should be able to get about 8 servings from this dessert, and there should be eight happy people after trying this easy to make peach dessert.

Recipe???

Dark Chocolate Cake with Ganache icing

100% AP flour  1 3/4 cup  (~260 gm)
~150% sugar   1/3/4 cup - 2 cups (~390gm)
30% Dark cocoa powder 1 cup (78gm)
2% Salt 1tsp (~5gm)
2% baking soda 3/4 tsp (~5gm)
2% Baking powder 1 tsp (~5gm)
44% 2 large eggs (115gm)
94% milk 1 cup (244gm)
68% coffee 3/4 cup (178gm)
46% Vegetable oil 1/2 cup (120gm)
2-3% Vanilla Ext (8 gm)

Ganache Icing
1 cup semi sweet chocolate chips + 1/2 cup heavy cream (melted together and keep at Room temp)

Mix and sift all dry ingredients into mixing bowl.  Add wet ingredients.  Mix on medium speed for 2 mins with the whisk or batter attachment. 
Pour into greased and floured pan.  Batter will seem on the wet side. 
Bake 350F 30-35m until tooth pick comes out clean
Immediately cover and place in freezer for ~30m to cool. 
Spread Room temp Ganache and serve warm.

Chau, was the coffee instant coffee crystals or fine ground coffee beans of choice. If the coffee is ground beans did you find it gritty at all?

I think the recipe is calling for liquid coffee.
