Has anyone seen this? (Breville Smart Oven Pizzaiolo)

Hey!

This is the latest Breville's product. It does look nice from the outside... and the pictures from pizza? well, they look good, but I have many doubts they were cooked in it... It only goes to 750F..

Overall, it does look very nice and easy to use for a home user.

It only goes to 750F.

Depends what is being measured and where. Radiant heat from the elements could direct enough energy to create the results in those images. No physical reason why intelligently balanced heat distribution in a countertop device could not produce great pizzas.

When I was baking in my grill, it was typically 750-775F for 2:15 or so with similar results to what you see in those pictures.

Depending on the price, I'd seriously consider adding this to my arsenal for when I'm not able to fire up the WFO. I've got a bunch of other Breville appliances that I'm pretty pleased with.

Funny little thing. Would be interesting to see someone in here try it with shorter baking times.

I intend to try it as I have been casting about for something to supplement my WFO. I'm guessing based on their other countertop ovens that this will come in around $500. I would do a triangle test from the same batch of dough of pizzas baked in both ovens.

I canít find any specs on it.  I hope it will handle at least a 12-inch pizza, preferably 14, with Blacksone-ish preheat times, results and pricing :-D

I know it's marketing and everything, but I thought the video was pretty good if a little sparse on specs.

I think the video showed that they understood pizza baking.  That is better than most!  Who knows how much is marketing BS?  They did say 2 min-ish and that seems open and honest.  I'll be interested to know what the the final price is.  I'm assuming it will be 120V.  Like Bill, I'd be willing to give it a whirl.

Breville is welcome to send me an eval unit  :). I will be as unbiased as I can be given I am already a big fan of many of their products.  If Breville-USA marketing is on the ball, they are already monitoring this thread.

Based on my past experiments I don't have much doubt cordierite at a constant 750 with a heatsource underneath can produced what they are showing.  There is a big difference between 750 launch temp in an oven without a bottom heat source and 750 constant with a heat source that runs during the bake under the stone.

Here is my biggest concern: My dough cooks on a 900F deck in about 60 seconds. That same dough at cooler temperatures for 2 minutes is going to be dead. This forum abounds with threads about achieving good results in cooler ovens. I'll probably have to make adjustments to my normal dough (flour blends, added fats, sugars, etc.) or hit it with a Searzall or any number of things. I suspect the oven will come with recipes that are intended to create what we see in the photos.
