Recommendation For LDMP
« on: September 19, 2021, 03:59:20 PM »
I went to order LDMP from NY Bakers and there sit says the are no longer selling products. Can anyone recommend another source or brand for it. The only one thats a lower lintner is the Red Star on Amazon at 60 degrees. Is that one suitable?
I started out with nothing. I have most of it left.

AP Mauri is the one you want to buy.  You can buy it  from Nybakers.com or from https://centralmilling.com/product/type-00-pizza-flour-organic-type-00-normal/.  Central milling doesn't have it on their website but they sell it in multiple sizes and is the same product as Ny Bakers.  This is the one Tony Gemignani mentions in his book "The pizza Bible".  It is a great choice for pizza in a home oven!!!

With math you can use any brand you want. I prefer pure malt and buy from Breadtopia. Why pay extra for wheat and sugar added?

If you need 10 grams of 20 L malt but you have 200 L malt, then use 1 gram.
