Dessert Pizza
« on: January 25, 2015, 09:45:16 PM »
Just made an AMAZING dessert pizza in my Blackstone oven. Pretty simple: melted unsalted butter, coconut sugar, cinnamon, topped with a powdered sugar glaze (powdered sugar mixed w/melted butter & milk). It tasted incredible, the sugar caramelized just enough to be slightly crispy in some spots yet still gooey. The only different thing I might try next time is using mascarpone cheese instead of butter because it won't be as runny, and the sweetness should go well with the cinnamon & sugar. Might also try freshly ground cinnamon from sticks.

Hey jleonard,
Looks like you and I think a little bit alike.  Here is a similar pizza of mine that I posted in the dessert forum a couple weeks ago:  http://www.pizzamaking.com/forum/index.php?topic=36216.0

Were you thinking of trying the mascarpone cheese as the "sauce" and brushed onto the dough or as part of your icing?

The mascarpone will definitely give you that buttery flavor/mouthfeel you are looking for yet it lends itself well to the sweetness of the other ingredients you used.

Yes, I was going to use mascarpone for the sauce instead of melted butter like I used on this one. The melted butter proved to be very messy when it was fresh out of the oven.

I actually made it again last night with melted cream cheese as the sauce because I didn't have mascarpone and it was MUCH better, but I think the mascarpone will still be the best option. I'll try that when I make some more pies tomorrow.

My family is completely addicted to this and it disappears faster than any pizza I've ever made. It's incredible!

P.S. I didn't even realize there was a dessert pizza form, I discover more new stuff on here every day!

Looks great. Do you have a recipe for the toppings?  Thanks.

Butter, sugar, and cinnamon pre-bake and icing (milk, powdered sugar, vanilla) post-bake.

I love  mascarpone on dessert pizza, but Ive found that it breaks at high temps, even with short bake times.  Now I add it just before done or post bake, and the steam and heat from the pizza melts it nicely without the separation factor.

I use the icing recipe from my cinnamon roll recipe as shown below.  Mix it up and put it in a ziploc and then just make a small snip of one of the bottom corners of the bag and you can just pipe it onto your pizza (after the bake as stonecutter mentioned).  Keeps well in the ziploc in the fridge for quite a while.  Or just scale it down to make smaller amounts as needed.

4 oz   cream cheese
¼ c   melted butter
1 c   powdered sugar
1 t   vanilla extract
1 t   lemon juice
Pinch of salt

There is a restaurant near me that is all about chocolate, they have an excellent dessert pizza with chocolate and roasted marshmallow, it's simple to make, but tastes amazing.
