All purpose vs High Gluten flour

Please discuss which type of flour and what specific brand you like to use between all purpose and high gluten for the following styles. Use as much detail as you like. The more information the better! Thanks!

NY style
Hand tossed
Crispy thin crust
Chicago deep dish

Bread flour will work just fine for the first two in your list. Not sure what the last two things are?  ;)
