Delancey, Serious Pie, and The Independent Pizzeria are my three must hit spots when in Seattle.

These two spots are chef/owner operated, and likely to be more consistent and to have a higher standard for the style than other places you will come across:

Serious Pie is also consistent. Itís just a bit less NP than others. But boy, it is good!

Came here to mention GPK .... i haven't tried them but a chef/friend that i have worked with just did an event with him and he uses a naturally leavened pizza ...not sure i'd call that (or any other pizza spot in Seattle) true neo but i think GPK is a good alternative from what i've seen and heard.

There are several AVPN certified Neapolitan places in Seattle, but (in my experience) not many obsessed pizza cooks in those kitchens.

Serious Pie is good, but different style.  Honestly, Seattle is not the town that would make me say "I need to get the pizza there".  My suggestion would be to go to Serious Pie and then do other types of cuisine.  Various types of Asian food (definitely sushi), seafood, bakeries, brewery tap rooms.
Get pizza in places like NY, New Haven, Philly, Chicago and so on.  Don't go to Austin, TX and look for a great cheesesteak - that math doesn't work.
