CF 24hr using spiral mixer

Hi would appreciate some advice please.

I have a Mecnosud IM8MV Spiral Mixer. Want to make CF dough either 24 or 48hr if you guys think Caputo Pizzeria Flour blue bag can handle it. The method i will try is video below

First things first... what kinda oven? What temp are you going to use and what kinda pizza are you wanting to make?
