The cast iron door is to be mounted on the arch on the outside of the oven. It is why it over laps. And does comes down about 1cm bellow the floor.

The second door is the insulated door and comes to rest, passed the cast iron door, against a recess where the cooking chamber begins. It is design to seal the cooking chamber to retain heat and steam.

Now you lost me for the 6,5cm from bottom to door frame. How do you come up with that number?

Let me ask in a different way.
The door is matching to the arch now.
Do I have to cut 7,5cm from the arch if I do not assemble the raising parts?

Yes, you will need to cut 7,5cm off to the arch, it should be exactly 2 bricks high.
And you will need to buy a new door.
